How to serve

Green tea leaves are fragile, and, in order that they conserve all their vitamins, the temperature of the water used to make the tea is of utmost importance. Choose water that has been filtered, or which has as neutral a pH as possible.

Use 1 small teaspoon of tea leaves for every 20 cl of water. Leave to infuse for 3 – 4 minutes at 70°C.

For the black Pu-Erh tea, leave to infuse for 3 – 4 minutes at 85 - 90°C.

For the Rooibos tea, leave to infuse for 4 – 5 minutes at 85 - 90°C.
